Since 2018
Founders Alexander and Ruben have been exploring distillation techniques and botanicals. After countless maceration and distillation trials with rare herbs, distillates emerged with unprecedented aromatic profiles. This was followed by years of research into a technique they call “botanical ageing”. This technique involves reconstructing single-botanical distillates into complex flavour profiles, harmoniously composed of primary, secondary and tertiary aromas. These pure profiles are supported by juices from fruit varieties, heirloom cultivars, grapes and unfiltered verjus. In this way, the first ready-to-serve alternatives for wine moments were created, with exceptional purity, straight from the field.
Today
Research at A.I.R. is ongoing with a single objective: a new generation of drinks. Seven years of development has resulted in distillates that are precise, clean and aromatically deep.
