“Awa” (泡) stands for delicate, sparkling bubbles.
Delicate Ginger – Yuzu – Fruity Japanese quince – Allspice

Freshly sliced ginger
Through our techniques you have never tasted ginger this way before. Our distillation method captures above all the fresh 'top notes' of the raw ginger. Usually you experience ginger in juice or infusion form, which often carries a "rooty," dull flavour with it.

Yuzu, 100% hand-pressed
The most delicate citrus, hovering between the soft sweetness of mandarin and the sharp freshness of lime.

Sweet balance from Kikaijima
For this blend we chose unrefined freshly pressed raw cane sugar from Kikaijima. The Japanese island is characterized by a raised coral reef. This soil, rich in minerals, contributes to the distinctive umami-driven flavor and quality.

Sour balance from Japanese Quince
This is a very fine acidity that, alongside the yuzu, gives a lovely fruity balance without dominating too much. This quince variety provides a beautiful platform on which the other distillates, such as lime and allspice, create a lovely sultry tension.

Tasting notes

Nose: Fresh & Citrussy with aromas of ginger, lime and allspice.

Palate: Full & Lively. A balance of sharp yuzu, lime and ginger notes, supported by sultry nuances of allspice and cinnamon. Rounded body thanks to the Japanese quince.

Finish: Tight & Dry. A subtle spice now emerges that evolves beautifully into a dry finish with herbal/spiced notes.

How to serve

Serve ice cold at 3 — 6°C in a wide champagne glass. You can add ice cubes (optionally).

Natural sediment may form at the bottom of the bottle. This deposit is the result of a natural process that occurs while the liquid rests after bottling. At this stage, we deliberately avoid heavy filtration so we can analyse the flavour profile of each batch release.

Serving tip: place the bottle upright in the fridge for at least 30 minutes. This allows the sediment to settle at the bottom, so you can pour gently without disturbing it.

The difference between dried and fresh ginger is significant. We want to catch the top notes of the ginger and in order to do so, we choose to distill the ginger with the peel.
